Susannah Faulkner '10 is ready for a food right. And she hopes you'll join her.
Faulkner is the university outreach specialist for Udi's, a company that makes gluten-free food. The position, created by the company especially for Faulkner, was a result of her work in establishing the gluten-free pantry in the Campus Center Dining Hall while she was a student at IC.
"As a freshman I came into Ithaca having a severe intolerance to gluten as well as milk," says Faulkner. "Eating in the dining hall is such a social experience, and it was really hard for me because I'd have to bring bread into the dining hall and worry about cross-contamination."
She worked tirelessly to promote celiac and food allergy awareness on campus, and as a result discovered her passion. "Ithaca College made me realize my purpose."
